On the nose, it reveals aromas of morello cherry, plum, and wild berries, complemented by subtle spicy notes. On the palate, it is dry and well-structured, with soft, expressive tannins, balanced acidity, and a persistent finish. It pairs beautifully with earthy first courses, roasted and red meats, and aged cheeses, making it a rich and versatile choice for hearty meals.

Vinification:

The Irpinia Aglianico PDO “Tau Red” is an intense ruby red wine produced from high-quality Aglianico grapes grown on mixed soils and trained using the spurred cordon system. The vineyard has a density of 5,000 vines per hectare, and the harvest occurs between late October and early November, yielding about 80 quintals per hectare under optimal conditions. After harvesting, the wine is matured for four months in French barrique and then aged in the bottle for 6–8 months, a process that enhances its structure, elegance, and complexity.
